Never cooked a Prime Brisket. Hope I don't screw it up. Cooking it for the Mrs. Birthday bash. Trying a new rub. Meat Church Holy Cow. It's gonna be an all nighter. Cheers!

Most of my recent brisket cooks have been Prime. Nothing to worry about. Just have a little more fat for moisture and flavor. Here lately I’ve alternated between Holy Cow and Sucklebusters 1836 depending on who I am cooking for and what I feel like. You’ll like it!

Put it in the cooler at 9am to rest a couple of hours. I'll post pics as soon as I slice it. 16 hour cook.

Big difference in a left side Prime Brisket in tenderness. It pulls right apart and is super juicy. Meat Church Holy Cow was good but I will go back to regular most likely next time.
