The Wife and I went to Wally World this morning to pick up some things. Our particular Walmart has a separate bin for their Briskets and I always walk by there to look. They are generally select grade and middle of the road but occasionally, there will be a choice or Prime orphan thrown in there. Whether i'm correct or not, I have 3 things I like if I'm going to shell out the money on a Brisket:
1. I want the flat end to be thick, not tapering down to a quarter of an inch.
2. I want to be able to bend the Brisket double, the limper the better
3. If possible, I want to buy a "Left handed Brisket"
As I was picking through the pile I noticed one that the end of the flat was squared off and at least an inch thick all the way across ( check). It was so flexible I could touch the end of the Flat to the top of the Point(check). I turned it over and surprise USDA Choice CAB .
Into the buggy at $1.97 per Lb; total $27.00

Great Score and BTW, I too believe in bending Briskets but I mentioned it here one time and got "Chastized big time" - - - U2 on the Weekend

Oh well. each to his own; it's one of those things that is a matter of opinion; I have mine and wouldn't take too kindly to being Chastised about it.

Nice Score, Not a lot of guys know about the left handed brisket story. At least when I bring it up I usually get frowned eyebrows, and even after I explain I still get called out on it.

Allen - I froze it. when we get a small break in this heat I'll fire up the stick burner; I'll post some pictures
Ric - I read that a long time ago and started paying attention to the cattle on my Father-In-Law's and other places. Sure enough, most of them lay on their right sides and pull themselves up with their right leg. It may not amount to a hill of beans, but it's something I do.

That's definitely a nice looking brisket.
I can relate to the gripe about the flat being too thin on alot of them. They all seem that way out here.
