Received my firebox Friday night. Set it up yesterday and ran a quick burn to get rid of excess crud. Today it’s fired up, ribs going right now. As a side show, burnt ends Tampa style, (I made up my own BBQ sauce mix :D ) will post those later but meantime just a quick preview ...

Well, blew the first cook on the rebuilt Joe. Used a little too much Voodoo Chef Black seasoning. :( Salty as can be and the bark was so much it was hard to cut the ribs. Meat was as tender as ever, but the saltiness needed a few Coronas to cool down :angryfire: :oops: :oops:
There is always next time! Smoked mahi mahi next weekend, will serve over mashed potatoes and a peas tomato sauce. Unless chemo number eight kicks my butt. Will know by Wednesday. Meantime, happy memorial weekend to all and cheers!!
