Kamado Joe and BGE table question

Greetings friends!!
I have a question and a medical update plus the destruction of a brisket (Oh nooooooooo!!!!!!)

Question:

I found a very reasonably priced BGE table at my local Ace Hardware. It looks like my Joe classic should fit, however I have been told that because the hinges are different the Joe will not fit. Are any of you aware of this?

Medical:

Visited a specialist at the University of Florida that can remove my pre cancerous colon growth without cutting me! Scheduled for July 9th. You know I will keep you posted. All you folks have been very kind with your well wishes, prayers and just simply offering an encouraging word or two, I appreciate all of you!!!


Destruction:

Last time I smoked a Boston butt I let it go for some 20 hours on the Joe and it was spectacular! This weekend I decided to try the same technique on a brisket. Got a 7 1/2 pounder at my local GFS, (3.69 a pound, best deal in town). I cranked the Joe to 200/220 degrees and made sure temp was steady. Seasoned the brisket with lots of sea salt and black pepper, (love Texas style brisket, nothing else is brisket in my book). I let it go for 14 hours, no peeking. At 5 in the morning the Joe was running 190 degrees. I opened the vents a bit and let it run at 245 for another two hours. At 7am I temped the brisket, a perfect 200 degrees. I wrapped it in butcher paper and let it sit in the Joe for a couple of hours. When I pulled it out to trim the point, the brisket was pouring juices!! Very moist and perfect bark! Brothers and sisters, brace yourselves, this is when Bogiedr went too far :(

After separating the point, I wrapped the flat in butcher paper, placed in a cooler and let it sit for a few hours. The point was cut for burnt ends, KC style. The burnt ends were awesome!! And then I went to cut the brisket … :angryfire: I did not account for the brisket continuing to cook while wrapped! It went from oozing juice to begging to become brisket chili! :whiteflag: SO I chopped it,(which it chopped very nicely!) and has great flavor. So my dreams of great brisket turned into what I hope is great chili by mid week. I killed the brisket! I am :oops: that I could forget that it will keep cooking if wrapped and placed in cooler. The only positive is that I did not have anyone coming over for brisket, otherwise a fast trip to Willy Jewels would have been in order!! Lesson learned as this is the first brisket I destroyed, :shock:

Great post. Happy to hear the medical will be good.

I have no experience with briskets but appreciate your writing. I learned what not to do. I have one in the freezer that I plan to cook in the near future.

Well, the dead brisket made awesome chili!!! I used Rotel diced tomatoes with jalapenos … wow!! Between the mesquite flavor, the usual seasonings and the Rotel with some shredded cheddar, awesome!!! :cheers:

Prayers for your quick recovery.

I’ve heard several people say that briskets are just hard to do. I’ve only had my Joe for about 3 weeks and attempted a brisket. 4:30pm - 1:30am was the cook time. I over cooked it, hard as a brick on the bottom, pretty dry except for the point, it wanted to split instead of slice. However I thought it tasted awesome, I had made my own rub. I think my next will be better.

Not sure what you are looking for as far as a cart but I bought a Big Joe without the stand and built my own

Hello fellow smokers!!!
Procedure at Shand's U Florida unsuccessful. So we are back to surgery my heart may not make it through or a … dare I say … a bag?? Bag = not an option! Consulting with UF Surgeon as well as my local surgeon and cardiologist. During your next cook, just think of Bogiedr, hopefully it all works out! I will post again before I go into the hospital for surgery. Of course I will delay so I can at least draft my three Fantasy Football league's rosters. :D
