Sloow boston butt cook this weekend

Hi folks! Been away for a bit, not feeling great these days, but as always, hanging tough!!

Found Victoria Taylor brine mix this last weekend, so I thought, "why not do a long brine for a Boston butt?" It is the "smoky" blend. So … I will brine for slightly over 48 hours and will inject with the brine an hour before it hits the Kamado Joe. Going to try something new for me, slooooow pork cooking! I am talking 200/225 degrees max for at least 12 hours! We'll see if it turns out as good as my mojo pork. Typically I go 250 Degrees for 6/8 hours, let's see what I do at slower and longer! Will post pics of the process.

Medical update!

Found a Doc at University of Florida that says he can remove my cancerous colon growth with a minimally invasive procedure. Since I am no longer a candidate for surgery, (odds are 70% failure rate in my case), I am willing to try this. I only post this here because everyone has been so supportive! I appreciate everyone of you a ton!!! :D I will update as results are available. Consultation is in mid May, I suppose at that time we will set a procedure date, so I will keep you updated! Now back to cooking!

I hope this experiment works as I am trying hard to avoid buying a pellet grill. If I can control the Joe for 12/15 steady hours at 200/225 degrees without reloading … why would I need a pellet grill? Just another excuse for a long cook :laughing7:

Also thanks for the medical update. I have been wondering how you were getting along, as I'm sure others have and hopefully this U of Florida Doc will be the answer to everyone's thoughts and prayers. :salut:

Cook is done! Turned out awesome, and somehow I cannot post pictures. I will continue to try. Cook took 20 hours at 200 degrees. Best pulled pork ever!!!! Will keep trying.

As you can see the photos are all out of order, cliff notes ... brine, pat down, on to kamado joe, 20 hours later at 200 degrees, finally pulled pork! My best ever!!! My wife stated she’d never eat pulled pork at a restaurant ever again if I keep producing this. Guess that is a good endorsement?
