One more question, k.a.m. Does trimming one down to that level drastically change the cook time other than "by weight" guestimates?

Most definitely. That brisket went on at 5:30 A.M. and was resting in the cambro at noon running the drum at 275° 300°.
At 165° it was panned and added 1 cup of beef broth then foil covered. At 205° it was probe tender and went to rest.

I have NO idea how to get 9 bones in this box...But here is my first ever Comp turn in! Perfect bite, great flavor!
