Pork Chops Hot and Fast
I found some thin cut chops on the discount shelf and decided to take them home.
Marinaded in McCormick's Brazilian Steakhouse and cooked hot and fast with cherry chips for smoke.
My wife roasted potatoes and steamed some broccoli for sides. Dinner rocked!

they seem to have been on the "affordable" shelf lately..
Those look great, the key on the thin ones is not to over cook, they get done in minutes

I actually think the thin cuts are easier cooks hot and fast - I go 3 to almost 4 minutes, flip and done perfectly.
The thicker cuts need lower cook temps to get done right and you need to monitor the temp. I think they're better done 2 zone reverse seared.
I don't like a shoe leather chops.

I picked up some thick cut bone-in Chops and fixed them the other day.
I stuffed them with chopped anaheim pepper, chopped yellow sweet own-yawn that had been sauteed in diced bacon.
I sprinkled them very good with Suckle Busters Sugar Daddy and then baked in the oven at 350 for 25 min and they came out perfect.
