Hi all,
I am happy to have found this forum as I am certainly a BBQ enthusiast. A little about myself, originally from Arizona but have lived in San Antonio since 2010. As the saying goes, "I wasn't born here but got here as soon as I could," I first got into 'low & slow' smoking back in 2015 when my wife and I purchased our home and I finally had a small space to work with. With the purchase of the Oklahoma Joe Longhorn Combo, I learned the basic principles and managing a fire and turning out a pretty decent product for the conditions. However, as many may know the firebox side and smoke chamber of this unit is relatively small and in turn, the meat is relatively close to the fire. With learning the in's and out's of the smoker I was generally able to manage it however I've dealt with many issues such as temperature spike unless I am putting in relatively small chunks of wood.
Well, after many months of research and looking I recently pulled the trigger and purchased a Yoder Kingman. Still have about 9 weeks to wait for it but can not wait for it. Looking forward to providing many pictures of cooks from this unit.
