My favorite thing to do @ the Texas Motorplex
Nope.....Not watching the cars go by real fast
Nope.....Not watching the skimpy dressed girls in the booths (although that's a dang close second!)
It's preparing 350lbs of whole sirloins for Sunday's Buffet style lunch!
Fat side down first.....It's fixing to get entertaining.
Don't panic! It's gonna get bigger
This side almost done.
Done, time to pull and flip.
Terrible picture they look burnt but they are not, just waiting for the blaze to die down and back in meat side down
After a overnight rest in the refrigerated truck back on the smoker Sunday morning for finishing up.....internal temps 110 for those being held in the oven, 120 for those going straight to the carving station.
I forgot the camera when we went across the track to sample the fruits of our labor so no pictures of any of them being sliced I was very pleased with the outcome though. So was the chef who served them.
During the second batch my eldest daughter came running up and said "Dad! You cannot believe the crowd of people watching ya'll from the fence!"

Now my favorite thing to do at the Motorplex was to drive a real fast car down the track...
When are ya out there next? Do ya only do the Nationals? I'm still gonna get down there for one of yer shindigs.

James I'll be at the ADRL races next month but not sure if I'll have the pit or be in the kitchen.

Is that the race Oct 23 & 24? If so I will probably be there too. Went to Cowtown Speedway this past Sat night and bought a program. They gave me four 2 day passes for the drag races with my program.
