After a overnight rest in the refrigerated truck back on the smoker Sunday morning for finishing up.....internal temps 110 for those being held in the oven, 120 for those going straight to the carving station.
I forgot the camera when we went across the track to sample the fruits of our labor so no pictures of any of them being sliced
I was very pleased with the outcome though. So was the chef who served them.During the second batch my eldest daughter came running up and said "Dad! You cannot believe the crowd of people watching ya'll from the fence!"
