I am still a novice at smoking with wood, but I am enjoying navigating the learning curve through trial and error. I have an offset smoker in which I burn some old pecan that falls off a tree in my yard. The firebox is a bit small so I spend some time around an electric log splitter or with an axe in hand.
I’ve had several adventures in the backyard such as accidentally smoking a brisket flat that had been brined by the butcher to be corned beef. I made that mistake twice due to poor labeling of the meat. I was more disappointed than upset.
I guess I also made the rookie mistake of attempting to control my smoker by adjusting the flue damper. I’m sure that most of you can guess that there was some major creosote buildup on the meat. Bitter brisket anyone?
Thankfully, mistakes are rare. I figured out that I could get a quick fire going with a small MAPP or Propane torch (major time saver). I also have great luck cranking the temperature up and doing some hardwood cooking (great for chicken and sausage).
I recently started a blog that is mostly about BBQ joints around the metroplex as well as whatever other BBQ topic peaks my interest. However, I think a forum like this would be a good fit for my more personal BBQ thoughts and ideas.
