smoking for tomorrow

Postby JaCK2U2 » Sat Nov 01, 2008 5:57 pm

Did an eye of round and a small piece of pork loin to slice up tomorrow for sandwiches. Cooked on my WSM at 210 degrees. Both finished at the same time (lucky) - beef at 135 and pork at 151. Rested for awhile and put in fridge. Tomorrow, sourdough bread, thin sliced meats, cheese, olives, pesto and other goodies, wrapped and heated in the oven. Will post pics when done.

A really good looking start. What kind of sauce do you use on sandwich? CF :D

C'mon down - there's enough meat to make several loafs. I figure enough for my wife to take a whole loaf to work Monday. That's how we usually cook on Sunday - enough to feed the Wal Mart crew on Monday.

Do you slice by hand or by machine?

Gotta slice by hand, because I haven't gotten a slicer yet. I have a good long slicer knife, though, and it works fairly well.
