Hey yall from Houston.

Mid 40's, been smoking since age 7. We cook competition and charity events. We've got 2 trailer-mounted competition pits/kitchens. One features a Pitmaker Vault and the other has a home-built traditional Texas offset smoker made of a .5" x 42" steel pipe across the full width of the trailer. Other smoking apparatus includes another Vault and Safe, several Webers, Old Smokeys, etc.

On a big cook day we'll smoke several hundred pounds of meat at a time. When it's just for the family we might only do a small brisket and a couple slabs of ribs.
We traditionally use TexJoy seasonings or our own version to what we like.

We also make & occasionally sell a combination commercial meat preparation, resting & cutting board system that has grown from our personal needs into a part-time biz.

We don't use propane or a microwave for food we serve!
