Hello Bbq world,
We are just tapping into Fajitas at comps. This may be a silly question, but will judges DQ a Fajita entry if it is slightly pink. Fajitas cooked well done seem to be not as appealing when eating as compared to medium or medium rare fajitas. Second, do sirloin fajitas do better than plain skirt steak? Ive always been hit or miss with this cut of meat in terms of tenderness.

My experience is if the meat is pink inevitably one of the judges will complain about it which could result in a DQ. To me fajitas is all about the cut of meat. The better the meat the better the end result.

Have placed 1st several times with pink or no pink, sirloin and regular. Sirloin are consistently more tender but lack the flavor of the regular fajitas. At the end of the day, good moist and tender juicy flavorful meats win every time. Good luck.
