Made some muffin chicken thighs the other day.
Seasoned them with Piri Piri Sauce and chilipowder for extra heat.
Served them with grilled greens.
Grilled bell peppers, egg plant, zucchini and green onions.
Let them cool and seasoned them with a mix of olive oil, garlic and basil

Hahahahaaa...I was sure someone will say that.
I know it looks more like a loosing weight plate than a carnivore feast.

Grilled the peppers direct on the coals till black.
Pealed and cut them in to slices.
The onions were grilled over direct heat...just for a second or two.

This looks pretty cool! How did you do the thighs...were they boneless and stuffed into the muffin tins or what?

I deboned the thighs and wrapped them in their skin.

I start cooking them skin side down.
It´s kinda deep frying in their own fat.
Skin gets more crispy that way.
