New from Southern Illinois

Been cooking some on grills and smokers but not a lot in the passed few years and want to get back in the swing of things. We smoke our venison summer sausage on a whole made indirect smoker made out of a 250 gallon tank. I recently bought a business and will be doing some smoking and grilling but need some really good advise and pros and cons on this part of my business. Been looking and found this forum and cant get enough of the information and experience you guys have. My first move is to buy a cooker/smoker for the business that is more updated then my old smoker but it does a good job. Thanks
