Been cooking for one hour still a lot of time to cook. im just worried that I'm cooking it @250~350.

You should be cooking and not looking, but its your first and the nerves probably high. Just try to keep your temp from flucuating so much, keeping the lid closed will help with that issue. Good luck and cant wait to see the finished product

I'm just happy that my mother in law said: "This is so good" and she is a really picky eater.

Keeping the lid closed is the hardest thing..and one of the most important.

How long did you cook it ?
Temperature ?
Did you foil it ? If you did what temperature was the meat ?
What kind of wood did you use ?

Oh sorry if I didnt reply I was looking for my password.
I cooked this for 8 Hours.
Since it was my first time doing this I couldn't make the temp to be at 250~300 because I used too much wood so it's @ 300~350s and I just maintained it that way for 6 hours.
Yes I did foil it for 2 hours and make it tight. the meat temp was @ 150.
I used Mesquite, I havent tried any other woods though I might try the Cherry or something else to try.
