Running a Brisket hot and sort of fast...

Dropped a nice chunk of rubbed brisket in the BGE. Set my CyberQ to 330 F and away we go...

I see it has a two year warranty - eggcelent. Also see Kevlar mentioned in addition to Nomex.

Tried the Nomex a while back and had issues with the peal and stick adhesive. Came off first cook.

Hi-Que makes some nice stuff. Hopefully the Hi-Que adhesive performs much better than the original adhesive.

I cleaned the surface down to bare porcelain with a scraper, acetone and various pieces of sandpaper. I think that's the key to a good adhesion.

Also let sit closed for a few days before using.

Brisket.was good!!!
