I bought 3 pkgs at HEB yesterday. One said pork spareribs and the others said St. Louis style ribs. All were marked $2.97/lb. What's the difference in the 2 kinds? Visually the racks are basically the same although the St. Louis looks a little meatier.

Pork ribs labeled spare ribs are basically untrimmed, sternum area still attached and what not... St. Louis cut are spares that have been trimmed into basically a rectangle with the knuckles removed. Local markets often take the trimmings and will package it under the St. Louis cut ribs so you still end up paying for the weight of the trimmings.

Pork prices have gone up by about 30% recently. Whole loins were $2 are now $3.
Baby backs were $3 now $4.
These are Sam's club prices.
Cub (a popular grocer in these parts) are trying to get $25.00 a pound for beef tenderloin steak :angry5:
I think it is just a shame that the people are getting screwed. How can prices jump that much in a matter of a few months.
If things continue like this I may just sell my cookers and let them eat there own flippin meat. :violent:

There are many excuses why meat prices go so high so fast, but it all comes down to plain old greed. It's not the problem that prices are rising, the problem is people keep paying them. :violent:
