Prime or wagyu ??

I want to do something for a buddy I can buy either one but which way should I go budget is bout 100.00 any sugg?? I found out you can order wagyu from Sams lol
When I grow up I wanna be EITHER

Wagu is hard to beat and you can get them there in Plano at Hirschs Meat Market.

For $100 you should be able to get any high dollar brisket. I've had some Creekstone brisket (Franklin s BBQ) it was awesome, can't speak for Wagyu. I've done a handful of prime briskets, they are good but no guarantee though.

I talked to hirsch today and im kinda confined in the hosp and they WONT take a cc over the phone or online lol while i love their meats they need to get caught up in the tech end lol

Ya I got a reply from Creekstone today I mayy go with one of their primes
its funny sams calls theirs Kobe instead of wagyu

One thing to consider, is, wagyu cooks differently and needs more attention to detail. I'm sure either would be good though. Curious to see how it turns out!

I cooked a Creekstone brisket this past weekend side by side with a very good well marbled IBP, cooked both an internal temp of 215 and rested for two hours. Both were melt in your mouth tender and delish. Creekstone seemed to have a very slight edge on texture but I mean very slight and dont think most people would have noticed. Flavor wise I could not tell any difference one to the other. When looking for good brisket at the store look for one that has marbling on the sides of the flat and just every where the meat is exposed, that will be a good brisket.

Pretty sure it was just plain select, the cheaper version, local market that does not carry any high end meats. Label does not state if its either. I took a pic of the end after I trimmed to fit the tray this weekend. Thought I had taken a pic of the 100 dollar Creekstone but apparently I forgot but do remember it was not any more marbled than this one.

Thanks for posting this Arnie, I figured the Creekstone would be much better, but I guess if you can find any well marbled brisket and cook it well, then you are good. Did you inject either one?

RWBTEX, Thanks for the pic and info. I prefer choice over select because of the consistency in the marbling and have a hard time dropping over 100.00 for a 7 to 9 slice turn in at a crap shoot. I judged a competition this past weekend and of the 12 briskets 3 hit high numbers the others were a shotgun blast of ups and downs on points. I have had choice briskets that did not come out as expected along with my son-in-law cooking a Wagyu at one comp and was sorely disappointed when a select grade took first over his, he is a consistent top three in brisket. My point is as you said learn to pic your briskets whether they are select, choice, or prime and enjoy them. :D

dont forget to budget in shipping......

kam, that 1st place brisket was probably from sams and for sure juiced up with injection that beat out brents wagyu

James, your correct about shipping I forgot that. Yeah of the three tops I know for a fact two were juiced. :) I do not think Brent's was I could be mistaken. I was remembering Baytown last year when y'all lost out to the select HEB.
