Hi everyone,

I bought a Brinkmann Gourmet Charcoal smoker a few months ago and I've been trying to learn more about smoking ever since. I've only lived in Texas for two years, Texas style BBQ is a pretty new concept to me. I am a newbie when it comes to smoking, I hope I will be able to learn some from you.

Don't hesitate to jump in here! I've only been into serious grilling about 2 years myself, but I haven't let that stop me. :twisted:

I'm originally from Sweden, I lived in Massachussets for 5 years before moving down here, neither place has much bbq tradition though :wink:

My wife is from Lousiana though, fortunately she knows the basics of smoking.

I was going to smoke a Lutefisk once. The Mrs told me that I couldn't thaw it out in the house. Stayed in the freezer until it got frost bit, then tossed. :cry:

thanks for the welcome! This is my second Texas summer, I did get to experience the lovely summer last year with 43 days of 100+ degree days in the DFW area. Quite different from the summers I grew up to above the arctic circle where it rarely hit 75 :)
