Sticks vs Charcoal

Postby BooChimpa » Fri Mar 30, 2012 7:39 am

I have always been a stick burner but since I've been on this forum I have noticed a lot of people use charcoal. Just wondering everybody's method. Appears it might be a cheaper heat source. How does it affect the tast of the meat? I'm assuming you would use wood along with it just a lot less.

I use B&B lump oak coal. I get it at HEB. I like it becasue oak burns longer and keeps the heat more consistent. Adds a nice flavor too. I will throw chunks of oak or pecan on top of the coals for smoke.

coal to stick here also. i have noticed that it seems that folks with larger offsets tend to follow the stick school, whilst uprights and smaller offset flow with coal.

oh and in my NB offset, i made a charcoal basket and use it with some chunks of wood.

I use a home made propane starter (sounds safe huh?) to get things going. The charcoal starter idea I may have to try.

I have always used hickory on everything. I did venture out of my comfort zone today and bought some apple, pecan and mesquite. I'm planning on doing some ribs tomorrow. Might be time to play with some differen't wood flavors.....

I use charcoal (or lump sometimes) as the base with a couple sticks then sticks all the way to the end. Helps the sticks to burn and helps build a good base for the rest of the burn.

I use the RO lump to start to help build up a good coal base faster, and then I feed it sticks for the rest of the cook.

Start mine with 3/4 full chimney starter with lump coal. Then alternate between hickory and pecan wood slabs.
