Hi!

I'm a newb. I just started taking BBQ seriously and so far I have managed to make a good brisket as far as being tender(after 3 tries), I did some pretty good beef ribs on my first real attempt though they could have been more tender but the flavor was to my liking anyways. Sausage is easy to not mess up but a pain in the butt to stuff, but I can do that now. Chicken, forget about it! I could do that in my sleep.

What I need to work on.
Brisket: Needs more flavor and not quiet as tender (I overcooked it I guess)
Beef Ribs: Need to be just a bit more tender.
Pork Ribs: We will find out this weekend.


Cooking on a green egg knock off from char-broil, I prefer oak on everything but the beef ribs, I like mesquite best on those so far.

Favorite Q is Lulling City Market, Smittys, Louie Mueller and if anyone can tell me how fushacks makes those chopped beef sandwiches I will marry you. I haven't been to franklins yet.

This weekend I am trying Spare Ribs for the first time (that I am trying to make good q) so any advice is appreciated.

The plan is to trim them to a st L cut and marinate them in apple juice overnight so far...

Welcome. You will get a lot of help here from the pros.

A good place to start on spares would be the 3-2-1 method. 3 hours in the smoke, 2 hours wrapped in foil in the smoker with some kind of liquid, 1 hour in smoker unwrapped to firm up.

agree with 3-2-1. that's how I do it. I use oak. probably can do without the juice marinade....but I have never tried that. use a good brown sugar based rub. throw the rub on and go! and always grab the ribs longways with tongs between the
"2" and "1" stages and after the "1". they tend to break otherwise. good luck! post pics!
