I would cook it just like a brisket.

Basically they will cook the same as a brisket. They will give up the ghost around the 200° internal temp. for pulled beef.

Pulled beef is one of my favorites for making sandwiches. I prefer chuck roasts for cooking.
I believe this is also one of DATs favorite ways of doing roasts for his wife.
If you do a search for pulled beef or smoked chuck roast, I think you'll get a lot of threads to check out.

Chuck roasts make mightyfine pulled beef - I put them in a CI pot after hitting 160 but foil works fine and less stuff to clean.

I'll overcook a 15-20# shoulder clod pretty much the same as I do a Brisket, put in foil pan after 5 or 6 hrs, wrap in foil and let er go, lots of juice and fall apart. PS I try not to overcook my brisket. Good Luck!

Check out this link - have used it in the past. Not sure if he gives a time but I would speculate around 6 hours going at about 250 grate temp.

What kind of roast is it? Very important. If you treat and eye of round the same as a Chuck, you won't like it.

Sorry about that - presently on the road.

If you look under the recipe section at playingwithfireandsmoke.com you will find anprocess for sliced beef and pulled beef.

Pretty good site for other stuff as well.
