Hi. Hope all are well. decided to join up after reading this forum for a while
I have been a chef for some time and now a bar manager for almost 10 years. I am working in London and been travelling europe for 3 years, I'm going home to settle down very soon and get a hospitiality bussiness going as its beeen what i wanted to do all my life. I have had a few ideas and even made bussiness plans for concepts. But BBQ seems right as i believe my concept would work. I met alot of american's and grilled them for info one of them told me to check forums out and here i am.
Im always keen to learn about food, new recipes, tips etc. But i am curious in how BBQ restaurant's function in the kitchen as im puzzled by some things.

Lots happened lately.
I went to the USA and drove 8,000 miles for 6 weeks eating barbecue with my brother.
Ate at least 3 times a day & gained around 16 pounds
