Catering Help

So we got our first catering gig for a friends wedding after party. There is around 60-80 ppl. But i need help and guidence on menu and pricing. We can cook pretty much everything. PLEASE HELP!! Thanks
we have seen one of the spreadsheets but i would rather hear from people with experience.

Since it’s a friend, you might want to adjust a little on price.

Depends on what type of meat they are hungry for.

Brisket, sausage, beans, potato salad and tea, plates, forks etc. Use 7 oz ratio on meat and 4 oz on sides (if you are serving them). We’d price it at $16.50 hd.

Or ribs and sausage plus the add on’s above, price $18.50 hd.

cheapest i have done for a "friend" is 12.50 per plate. that was two meats(pulled pork and brisket), two sides(potato salad and baked beans), drinks offered were soda,water, and tea. for a desert apple and cherry turnovers. now the price would have been different (higher) for other sides and meats. on paper plates with plastic utensils
of course if you were like best friends i could see doing a lot of it as a wedding present.also price can change a lot if you are planning this to be a self serve wedding not to mention the type of table settings you are planning on using.

I am usually around $15 per head with 2 meats, beans, and all the trimmings...I never do dessert or furnish any drinks..

i'be been asked to do a few graduation party's.

for the way it reads, your doping the meat off, and letting them do a buffet?

are you providing chafing dishes or just disposable foil pans? what about serving utensils?

I assume this is delivered and set up, but not served?

so far the only one I've committed to is a dear friend and he is buying all the stuff, helping me prepare it, and taking it to the party (i.e. no delivery)... we settled on a handle of jack, that I'm sure I'll share with him while we prep... seems fair to me.

we will be smoking on site and setting up buffet style. we will not be slicing or serving. everything will be ready to eat. How much meat per person? does it vary if you have multiple meats??

depends on things like, are you serving up plates for sister marys' convent? or are you serving the dallas cowboys. as you would well know, the cowboys would definitely eat more per person. but on average with two sides, and the meat being say brisket and sausage..... i would give 1/4lb of brisket and 1/3 sausage link(based on a nine inch link). if its ribs and brisket, the ribs would be two bones same weight on brisket. chicken and pork, 1/4lb pork, and one thigh or breast. chicken quarters and pork or brisket or ribs, they get a choice of the chicken quarter alone or a combo of two other meats.
so as you can see that weight is relative to many things. i hope this helps
