Howdy to everyone. I am from the Permain Basin area. Rather, smack dab in the middle of it. Been cookin outdoors for 28 years, learned to cook chicken outside at age 8. Several years ago, found out the true difference between BBQ and grilling. I still love to grill steaks and burgers, but my favorites will always be low and slow, brisket and ribs. I have a drum cooker that used to be my grandmothers, though I hardly use that one anymore. I had a charbroil silversmoker but moved up to a NB Super Longhorn Deluxe (before they lightened it up and skimped on the material). I've made a few modifications to it, and it cooks perfectly. My fire can go completely out and it will still hold 250* for another 30 minutes. I would still like to get a WSM and would love to build my own trailer pit, but have other obligations at the moment. Anyway, that me. Great site and hope to learn and help out where I may.

You might want to look into building UDS or a poor man's version of a WSM.

Thanks for the welcomes. I was going to cook some spares tonight but after the weekend we've had and by the time I got them home, it would have been 10 at least before I took them off. So now I have to figure out when I'm gonna smoke em up. This week looks tight on work, not any chance I see of slipping out early. Maybe next Saturday.
