Well whats going on? I'm new to the website just thought I would finally join and get some inside secrets on how to smoke some good BBQ. My name is Andrew G been smoking meats for a little while now, I own a Tejas smoker 20x40, live in Schertz around a couple of good bbq joints around Rudys in Selma, Harmons bbq in Cibolo, Coopers old time bbq in New Braunfels, and Texas Pride bbq in Adkins all have great bbq taste but I thinks I'm coming up on them pretty quick from what my family says when I cook for them and oh yeah the neighbors too since as soon as they smell smoke they come runnin over to see whats on the menu. I always send plates over to test my bbq. I like to cook my briskets for atleat 12 to 16 hrs, ribs atleat 6 hrs, chicken 2 to 3 hrs depends on the crowd and what time they get here. I use alot of bolners rubs and substitue alot of other flavors I like that I think enchance the flavor, I've tried texas bbq out but it's a little too much sweet and hot at the same time for me. I cook outside all the time if possible trying different things on the pit, use alot of pecan wood since I just cut a huge tree down last year. I like the combination of pecan and oak for me just my opinion but use mesquite every once in a while. Had a Lyft time trailer pit put had to give it up for space, but the tejas has held up ok. Anyway looking forward to talking about good time ahead for cookin out. Thanks
