ribs bone down or up

i am tryin some more baby back ribs today and was wondering if it make a difference if you put the bone side down or the meat side down. last ones i did did not seam to fall off the bone like what i was looking for

thanks and this is what i got goin now. so as for rubs now i am using cabelas kansas city rub, what other recomendations do you have? and as for BBQ sauce i have origional KC, what else would you recommend. thanks for the help like i said i am new to this slow cookin

well here is the finished product, got to say this is one of the best ribs i have ever cooked, even my wife liked them and she is picky eater. what shall i try next?

Looks like you are on your way to great cooking...Nice rack!

My wife likes pulled pork sammies, look through the pork recipe forum, you'll find something to try. This is a great forum, I'm glad I found it.

Bones down - nice rack

How did you cook em - time, temp, smoke?

Couple good rubs to think about - Sucklebusters Hoochie Mama, Sucklebusters Hog Waller, John Henry's Pecan, Dizzy Pig Dizzy Dust, and bad Byron's Butt Rub. I use Hoochie Mama exclusively on chicken, turkey, cornish hens. The rest I use for pork.

thanks for the info guys i will look up the pull pork sammies and the rubs

as for cook info, i use regular coal to get the grill goin but cook using Lazzari Mesquite Charrcoal to do my cooking, (smokin or grillin) like the way it burns and flavor. so i thru a few chunks of soaked mesquite on the grill and it cooked for about 2-1/2 hrs between 200-225 temp

this site is great i appriciate your help, (for being a city boy and all) LOL

PS hopin to get my first pig hunt this year so i will be lookin to do some good cookin

Seems like a very short cook, even for true baby-backs (less than 1.5#/rack). Loin backs and spares take me 5 to 6 hours at 240°. Have you calibrated your thermometer?

I be willing to bet that the thermo is off 75-100 deg. and without a baffle in that CharGriller from the pic he slam in the middle of the hot zone. and for the record I do dry ribs and I never foil. My temps are measured on the cooking surface and I run 230-240 ribs done 4 1/2 to 5 hrs. I like a little tug to get a clean pull off the bone.
Never met a cow I didn't like with a little salt and pepper.

Those do look Good! Im with many here, that I use Sucklebusters Rubs, I make my own sauce, but a good store bought is Sweet baby Rays! Krogers sells it as many others. Great to have you join us here! 8)

Looks good - but that does seem like an awful short cook for ribs. Pulled pork would be a good choice to try. Easy to cook and great to eat!
