quick hot question
A lot of rubs I make have cayane in them. Someone said that you can try adding ground jalepino pepers instaed of cayane. I am not sure if this is close to the same thing in heat wise. I know tase is different. Has anyone else heard this? anyone try?

I've never tried it, can't see any reason to try, cayenne has always worked great for me and its easy to find!

Averages:
jalapenos = 5,000 scoville units
cayenne = 40,000 scoville units
The other thing is that I think jalapeno looses some of its heat over long cooking times (at least that's my personal experience), but holds a more sweet flavor. I like it added to a recipe just before serving.

I like to use chipotle powder in some of my rubs. If I want more heat, I still use cayenne, mixed with the chipotle.

Maybe it is me, but I think jalapenos (powder as well) gives more than just heat, it actually contributes a flavor element more than cayenne. Is it just me???

Cayenne is front heat, Chipotle gets you in the back of the mouth. At least that's my experience. I've gone to Chipotle over Cayenne in all of my rubs.

And as Gator stated, I have noticed the longer you cook jalapenos, the milder it becomes...

I like Chipotle as well over Cayenne if I'm looking for flavor. I also like the back heat it brings to the party. I also agree with what Randy said about the contributing that Green Chile flavor. I make a Jalapeño Chile - Lime salt from lime zest dried Peppers and K-salt,awesome stuff. and Gator that one will cost YA'.
Never met a cow I didn't like with a little salt and pepper.

Chipotles are smoked jalapenos - so heat + flavor + smoke.
