I've always thought injecting a brisket was a sin, propped up the fact that I'm needle adverse. I have to admit that I''m beginning to warm up to the idea. I do inject cure into briskets to make pastrami -you can see I'm at a crossroads My cousin who is a shrink will tell you that progress is measured in steps and not miles, so don't expect an order from me tomorrow but when the time is right... .
