Canning Sausage

Talked to my mother the other day about making sausage she said they never stuffed there sausage .They would grind and season and roll it in small balls and cook till done then put in a jar and add gravy and seal.I have done this and works great pour in a skillet and let it warm while the home made biscuits cook and eat.Any of you folks ever try this?Darrell

While I've heard and seen of pickled sausages, they were always stuffed into casings. Never seen it done the way you described, but I'd bet it is good!

Dw, we did the same thing,only we made Patty's. Fried them and put them in a crock with rendered lard. Just scoop some up and heat them up. Dang that was along time ago. They sure was good though. CF :D

She said they would use the wide mouth jars and make chicken fried steak and can it .Old ways may be coming back .I love to hear the old stories its getten harder to find info on the old ways anymore.Darrell

They didn't have the refrigeration we have today and had to preserve food in other ways. We'll probably live longer for not eating some of that stuff but that don't mean it wasn't good.

Darrell, we canned everything, meat, fish, fruit and vegetables. We used tin cans. Had a can sealer, then pressure cooked them. I still have the can sealer. We did also use some jars. CF :D

Brings back memories. We just used jars but like you said canned everything. I remember canning carp that stunk so bad when canning but when it came time to eat it was and tasted just like canned salmon. Canned beef looked sooooo ugly in the jars but was soooo good in the gravy over potatoes.
