In my 250 gallon cooker we used a square tube and it works fantastic. There are vents cut out with the plasma torch to let the heat and smoke into the cooking chamber, and are evenly spaced. In this pit, the pipe is at the very top of the firebox so the heat should flow through it pretty good i think. We shall see :D

Looking forward to hearing the results. I have no experience using a system like that. I've seen 'em, but ain't never cooked on one.

Got over to the welding shop this morning and saw smoke coming out of the Stacks :D :D . My buddies decided to fire it up and give it a test and it worked like a champ. I put the gauges in temporarily to see what the temps were running and they were within 10 degrees from one side of the tank to the other. The pipe we use to distribute the heat really works like a champ. They ended up getting some leg quarters and cooking them up, didn't want to see a great fire go to waste. The chicken turned out fantastic. They also got the trailer all ready for the Grille to mount on . We still need to build warming box, Sandblast, paint and then mount on trailer. I'm thinking the warming box will be either 3 or 3.5 feet tall and 30" wide 30" deep.

Well we have made a Design change, we are going to build the warming box on the opposite end of the tank instead of right over the firebox. WE came to this decision based on the weight distribuiton on the trailer and to kind of equal the out the tank. I think this will work out better in the long run. Plus now we can use the top of the firebox for cooking or heating large pans. I have attached a few more pics.

we put the gauges in temporarily to see how the temps were running (Bubba Q Thermomters)

u can see the brakets welded in where the tank will mount to, they also moved all the trailer wiring to the opposite side of the trailer to avoid heat damage

Thanks Rich777, Im sure hoping its gonna be done. My buddy thinks it will be done the end of this week, or middle of next week. Once its all painted and on the trailer there are still some things i want to add to the trailer. I would like to put a deep fryer setup on there, looking into a sink and water tank with a 12 volt pump, and looking into finding a nice used gas grille to mount on the side to.

Was over at the welding shop this morning and they were cutting out my warming box. The dimensions will be 30"x30"x 36" Tall, and will be built out of 1/4" Plate. I attached a few pics of the sheet they were cutting the pieces out of. I am working at the Fire station tomorrow and am hoping that when i can go by Wednesday the box will be completed and welded on. :D

The Warming box is on and man does it look like a Beast :D :D WE still have some finishig stuff to do on the warming box, like putting the mount for the Thermometer on, building the 4 racks for the inside,ETC. And of course we still have to sandblast and paint the whole thing.

thanks for all the Great comments, cant wait to post some pics of it completed and me BBQ'ng on it. Was over there today and they were cooking some Mojo Marinated Backstrap in it, smelled and tasted AWESOME.
