Folks I made some jerky last week and thought I would share a few pictures with you just to give you something to look at. Here is a picture after I had marinated it overnight and placed the strips on the smoker:

It was pretty tasty and was all gobe by the second day.

Looks good! Jerky just won't keep. Seems to evaporate somehow.

wheelterrapin, Jerky looks really good! Also poked around your photobucket site and it looks like your geared up to build a few things! What's with all the hit-n-miss engines? Looks like ya get quite the collection.

Yep Dave it was beef jerky.

Just this weekend I sold the last of my Hit & Miss engines except for one. I have had about 40 of them but being laid off, 64 years old, and trying to take care of the wife and raise two grandsons and provide a home for a homeless girl all with no help I had to sell them to pay bills. They are a lot of fun and I will miss them.

I use to have (2) Model A's and (4) Model T's but they had to go to in order to pay bills. I am one of millions that I hope this so called stimulus package will help but I am not holding my breath.

I had no idea that there were Hit n Miss engine men here on this board. I have fooled with them off and on for 30 years or so. Don't do much any more, but still have a few. Not many.
