Gotta give another vote for Fischer's. Their summer sausage is my favorite and they also do a top-notch job with game processing.

Well did have a bud who said they treated him right on processing a wild hawg which got sent to Hawg Heaven up around Nocona. Now the boy is a yankee from Iowa. I mean any Texas fella do his own processing. Right? Will have to scheck out that summer sausage one day..but seem to recall I did one time and didnt like it. I am gonna have to double check with the warden on this one. Course her memory is worse than mine so sure I wont get no help there. I just gonna have to try it again is all I know to do. Purty sure I aint gonna like it any mo betta this time of course. Yeppers come to thunk on it..it was purty bad as I recall.

Boars Head

I didn't look where it was made but I tried some Boars Head smoked sausage. Now if you are not familiar with the brand think upper tier deli type meats. Anyway the sausages were $5.50 lb and I selected the hot & spicy variety. How were they? In a word mediocre. There was nothing special about them, the heat was only crushed red pepper flakes, they were skinless and coarse ground. Occasionally you would bite into one of those (what the heck is that ? ) chunks that you spit out on the plate to help everyone else's appetite. Yessir a real disappointment for the price one can certainly get better for less.

Probably not the best, but it's real good. Tallent's Sausage out of Riverside, Tx. They make it fresh and in house. They've got everything from Pork to Jap and Cheese to Venison.

I had a Kielbasa style sausage from Hamilton Quality Meats that was outstanding. Other than that I like Pittsburg Hot Links and a whole bunch of others .
