Last Pastrami of the year. -FINAL PICs 12 20 08
Going to AZ for Christmas this year. Volunteered to bring some Pastrami, so I took an 15 lb packer out of the freezer today and its in the fridge defrosting nicely. Think I'll use Einstein this time instead of the WSM, and will trim it the brisket closer than I did last time.

You're just spoiled having those ceramic cookers. You could have fired up both ceramics and probably used less fuel than the WSM.
I wish I had a ceramic.

So very true. But getting back to the post, pics of the pastrami now posted. Will wait till tomorrow to slice. Total cooktime 11 hrs, 25min.
