Last Pastrami of the year. -FINAL PICs 12 20 08

Postby DATsBBQ » Tue Dec 09, 2008 7:10 pm

Going to AZ for Christmas this year. Volunteered to bring some Pastrami, so I took an 15 lb packer out of the freezer today and its in the fridge defrosting nicely. Think I'll use Einstein this time instead of the WSM, and will trim it the brisket closer than I did last time.

I find it works great. The traditional soak in pail method can get messy.

Its a capacity thing. Would have had to fire up both Einstein and Roma. Man, that WSM is a fuel hog

You're just spoiled having those ceramic cookers. :D 8) You could have fired up both ceramics and probably used less fuel than the WSM. :D
