I just had some stainless steel mesh grates made for an outdoor brick pit. My question is what is the best method to get any residue off these grates before cooking?
Is it wipe down with oil then burn anything off or something else I should do to get any machined oil off these grates.
Any help is much appreciated.

I'll post another tip here, I've posted it before but have never heard any feedback so doubt that anybody has used it but it works. For those nasty grates that you don't look forward to the mess of cleaning here's what you do. I know you'd never let them get that bad so these are the ones off'n the used pit you bought or found at the curb. Get a big heavy duty garbage bag and put the grates in then toss in a cup or two of ammonia twist seal and let it set at least overnight. The ammonia will clean the grease and carbon like magic.
