Homemade sausage first timer

Postby Rich777 » Sat Nov 29, 2008 9:42 pm

They turned out ok, was wanting a more coarse filling. My casing handling lack of skill is clear. Man those hog guts are difficult. Overall the taste is good. So I guess it turned out so-so. Cindy said it was too hot, looks like I'll be trying some different spices next time.

It all comes down to me not knowing what the #$%@ I was doing. Had a couple of blow-outs, big air pocket blow-ups. Just stuff that a rookie goes through.

Well Rich, let me be the first to offer my assistance with any problems you are having. :D
Send 5 pounds of your sausage links to me and after a comprehensive inspection and analysis of them before and after cooking, I will send my findings to you. :D

   I'll take ya up on that Jim. But not on this run, it needs alot of work. It had good flavor, but still alittle bland. Next time I think I'll use fresh ingridents. Garlic, peppers! IDK. :D :D

Well, I'm often afflicted with the same problems... Usually it's when something turns out great and I can't reproduce it! I've started trying to take notes when I cook... :D

I see nothing wrong with those. If you're like me, you're your own worst critic. Those looked like some links worthy of eating.

Nice lookin hot guts there, Rich! I love makin sausage but I'm far from good at it. I can't seem to get the fat to lean ration right for my tastes. Just make sure you take notes so you know what worked and what didn't.
