You may bump up the chili seasoning a tablespoon or so, with rotel and beef stock - it may take a little extra chili seasoning. Salt it and taste-test it first. LOOKING GOOD! 8)

I had a spoon full and noticed it needed something.

I added 1 1/2 tbls. of chili seasoning and some salt (didnt have any salt before). I could definately tell a difference !!

Why is more seasoning needed when useing beef broth and Rotel ??

Man this stuff is gonna be Hot !! :evilnana:

Water = no seasoning, aka plain.

Beef broth and Rotel have lots of flavor on their own which dilutes the chile peppers flavor.

Between the rotel/pepper sauce and chili seasoning - I would say you have a fair amount of heat.

The heat must have put him out of commission for awhile!
That pot of chili looked mighty good though. Curious as to what he thought about it......

Considering the time of his post and that it sounded like he was still working on it, maybe he works a late shift and just ain't had time to get back on the net... Sure hope the chili didn't do him in!
