Yeppers, just like Mama used to make... Back when meat was sparse, beans would extend the pot a good bit... I still like 'em in da chili...

Weren't no shortage of jack rabbits when I was growing up for a pot of all meat Texas red; although mama used to make a mean pot of chili beans. Regardless of beans verses no beans; da man made a mighty fine lookin pot of grub.

Well, we ate a bunch of rabbit too, but there was a few years when they were all consumed with worms... tough times I tell ya!

We ate a lot of beans, tortillas and taters too... anything that would confuse the belly into thinking it was full...

Battery died in the camera the other night so I didnt get a pic of the finished product. I am making some adjustments and making the second batch Saturday afternoon and will let yall know how it goes !! :lol:

Well I am not a big fan of sausage so I wont use it. A little less bell pepper (it didnt cook down that well). I think I will use more kidney beans in place of the pinto beans (teh pintos got too mushy). More jalepenos !! :angryfire: And more of your chili seasoning. And I wont cook it quite as long. I didnt need to add anything to thicken it up after all, it got really thick. Would like it a little soupier !!

Brandon,

A couple of things you can consider...

I have used beef stock instead or/in addition to water, it will give you a deep beefy flavor. Maybe you can use it to provide more liquid if it gets too thick.

Finely chopping your onions and peppers will make them almost melt away after several hours of cooking.

I put my beans in right before serving so they dont get mushy.
