I came across the “weekday brisket” video from meat church BBQ YouTube channel a few months ago, link below. I have watched it over a dozen times and couldn’t get it out of my head, it was the main reason I finally decided to pull the trigger on buying a pellet grill. I went with the camp chef woodwind WiFi and I could not be happier. The smoker functions flawlessly, the app could be smoother but gets the job done, over all I am fully satisfied. I finally got the chance to try out this method and it was the best brisket I have ever made in 18 years of smoking meats. Here is what I did:
