New member from the Left Coast

Hello all..
I'm a Californian (hope you don't hold that against me) and am really more of a lurker than a poster. My interest here is chili. To date I've been using an off the shelf spice mixes, but want to step up and 'roll my own'. My BBQ is an old charcoal Aussie but as my Homeowners Association frowns on smoke, my grilling time is pretty limited. My other interests are home made beer, mustard and hot sauce.

after reading your entro.. you are just gonna fit right in this forum..
Lots of "do it yourselfers here"; West Coast no problem, some folk will give you grief but it is all in good fun!!
I like making my own wine, have made it from several oddities, like prickly pear apples and such... Like making my own sausage, ham and lots of other things want to try beer some day... My biggest problem is I have this thing called a job that keeps hindering my fun times... 2.5 years from now and I will be fun all the time.... :D
then only real reason for me on here today is I have been under the weather for a week or two so when I feel good to the forum I go.....

Welcome Left Coast. Chili has become my newest venture over the last couple years. Have been able to work out my Chili Verde combination, my Chili Rojo still needs a good tweaking. But kick back grab a cold one and enjoy our little corner of the web. :texas:

@Spacetrucker ~ I love wine oddities! When I was stationed in the Philippines, I was introduced to a local wine made from palm trees called Tubâ.. it was at this point in my life when I discovered what sized lampshade fit my head.

Which yeast strain do you cast for your Prickly Pear Wine?

I almost always use a champagne yeast, mainly because of its alcohol tolerance up at 11 to 15% depending on the strain of yeast...
that lampshade I am sure that was some good entertainment :laughing7: :laughing7:
