Roasted chile chicken

Spatchcocked a chicken this weekend then coated it in some homemade garlic, onion chili oil. About an hour-hour fifteen and it was ready. Tasted as good as it looked.

Nice pictures. The chicken looks great. When I do a spatchcock chicken on my WSM it takes about 2 hours. That's for a almost 2 kilo bird.

No sir, the guajillo chiles are very very mild on heat, but very flavorful. We also make this oil with them where we chop them up very small then fry them in oil till crispy then strain them out, fry up chopped garlic till crispy and strain out. The oil that is left over is amazing, make almost anything with it, dressing, saute with it, dipping for bread, cover mozzarella with it and add in the crispy left over peppers and garlic. Made a pot of lentils last night and added a few of the chiles to pot while it was simmering. Sorry for the long rant, the chiles are good, and not spicy!!

This bird was just slightly over 2 kilos, about 2 and quarter, also cooked on WSM. But its old and full of holes, dents and air leaks...so average cook temp was a little higher than we wanted. But a fast cook done right can also reward you with a moist bird, and this time it did!

Dry toast peppers in cast iron pan until out side is black and crispy, remove from pan. Add in garlic and onion half and toast outside of both until blackened. Put chiles back in pan and add 1/4 cup of oil and fry for a minute or two. Turn off heat and dump all components in blender(I use nutri bullet) and blend well. Add in reaming 3/4 cup of oil and salt and continue to blend until items are well broken down. Dump chile oil back in pan and turn heat on high and fry again for one more minute. let cool and dump in mason jar then use how every you can think of. Will last a couple of weeks in the fridge.

Heating tortillas up in a pan with a little of this oil is pretty killer as well.

I can post pictures later on of the process if ya like, I always like seeing pictures, adds a layer of comfort to make sure I'm doing it correctly.
