Putting A Fire In The Stick Burning
I was in H.E.B. yesterday and saw these brisket's labeled, deckle fat removed, maybe I haven't paid any attention before but I don't think I've ever seen that before so I went ahead and bought two of them, 11 lbs and 13 1/2 lbs. I've been wanting to fire up the stick burner anyway. Last night I decided to trim them up and get them ready for Sunday morning, I have a grandson that has a football game today so today was out of the question. The only difference I saw was that I didn't do as much trimming as usually. I rubbed bought down with maple syrup, I started doing that a couple of year's ago, one is rubbed down with SB Texas Brisket Rub, the other with Bolner's Brisket Rub, peppered both, vacuumed packed and put in the frig in my shop. Hopefully they will going on the pit around 5:00am Sunday morning unless I decide to pull an all night'er tonight but I really don't see that happening. There's still something that I like about tending to the fire of a stick burner. If you notice from the pic's, they are both righty's, I didn't see any lefty's.

"OUP", that beer is fine right where it's at, I have to drive to Pearland today around noon.
Found something in the freezer to throw on the pit to snack on while tending to the brisket's.

?Pearland, eh? - - - lots of my Friends live in and around Pearland but my old stomping grounds is North towards the City around Telephone and Wayside - - haven't been in that neighborhood in a loooooooonnnggg time

I saw the same thing at HEB, good looking briskets. Good luck on your cook.

Interesting. HEB offers a lot of different meat options we can’t get up here in the metroplex. Looks like nice marbling as well. Can’t wait to see the done pics

HEB in Burleson and one is being built in Mansfield. Great meat market and have great selection of prime steaks as well.

I’m in Little Elm. They own land near us but odds are it will be a Central Market if they don’t sell it first.

The meat is raw, but the beer looks done and ready. Wonder if there will be any left when the meat is ready. Willie I still like the old way of tending the fire on a stick burner as well.
