Smoked Cayenne & Jalepenos

Smoked Cayenne & Jalepenos
I let some of my Cayenne stay on the plant until the turned Red. Picked a big bag of Jalapeños and then split them so the smoke can penetrate better. Fired up the Big Dog this morning with a chimney of charcoal and then added split seasoned Hickory. Later, I've got some chicken legs and Breasts I'll add. I'm going to slow smoke the peppers on the pit and then I'll have to bring them in after the chicken is done and put them in the oven at 180 until they are TOTALLY dried. I'll then grind them in the coffee grinder and put in shakers. I'm thinking about adding some salt/Granulated garlic to the jalapeño Dust; any suggestions on that I would welcome. Great Idea - - - I use Suckle Busters Texas Gunpowder in Chipotle and Jalapeno all of the time, However, my $0.02 on the Garlic would be not to add it to the Dust because then you can't use it without having the Garlic in there. You can always buy some Garlic Dust or Own-Yawn Dust "ETC"

I have 6 plants and barely any. The smaller hotter Asian peppers are doing great for mine but not the Jalapenos.

Bird was delicious. used SuckleBusters SPG and dressed with Smoked Paprika. Beautiful color and flavor was awesome

OK, left the peppers in the Pit until it dropped to 100. Into the oven now at 180 for how ever many hours it takes for them to dry

as both of us have said many times, it's too bad we're not closer because I have a dehydrator with 4 trays that would finish those off great overnight

That would be great. I’m just letting them dry at 180. I’ve been warned before that I have to take them so dry you can crumble them with your fingers

Cayenne's are dried and ready to grind. I'm going to leave them out and grind in the morning. The Jalapeños are being very difficult to dry; almost like a brisket in the stall.
