I haven’t noticed any real difference between strains of oak. I’ve had best results with oak, or a mixture of oak and hickory. Oak is always the primary, for me.

So what are the wood types suitable for smoking?
Pimento wood is fantastic on chicken but extremely rare and expensive to get.
If you get a chance try it out. I am saving the last batch i have for the next competition.

I still have pics somewhere from my time living there of it completely overgrowing and smothering Georgia pines. Whoever the idjit was that brought it over from Africa as cattle food should have made sure the cattle would actually eat it, and that it wouldn't grow berserk. Double fail, lol.

Mild Smoking Woods: Apple, Almond, Alder, Cherry.
Moderate Woods: Maple, Grapevine, Olive, Pecan.
Strong Smoking Woods: Oak, Hickory, Acacia, Beech.
Aggressive Smoking Woods: Mesquite, Manuka, Walnut, Pimento.

I've been guilty of that BUT ONLY soaked wood chips to throw onto the hot coals at the beginning of the Smoking or Grilling - - - depends on what I'm wanting to add smoke to.

No soaky fer Smokey. Will produce a bitter, thick, whitish (or blackish if green wood) smoke. The key idea is to get a stick burner producing a pale translucent bluish smoke, which is a sign yer cooker is burning efficiently without a lot of byproduct. That takes hard cured dry wood.

No, and I'm cooking on a gravity feed with wood chunks. Wet wood smolders / steams and produces some nasty smoke.
Even grilling on my BGE, I use dry chips.
