Paella Pan Shrimp under the Pop Up AGAIN !

Paella Pan Shrimp under the Pop Up AGAIN !
So we're on our 4th day of constant rain and 3 more to go before we get a break Saturday. So instead of letting it get us down, I thought...why not break out the Paella Pan and light a fire, after all the temp outside is almost perfect for night cooking.
So with the monsoon on all sides along with the thunder, I broke out some White Wine, Double Smoked Deli Ham, Shallots, Fresh Garlic, Olive Oil, Salt, Pepper, Blackened Old Bay, Heavy Cream, Asparagus, and some Extra Jumbo Shrimp and whipped up something new.
I've made this before, but not with the Ham or Blackened Old Bay.
It was all really good, but if I could just learn to make the sauce alone I could live on just that :):)

Were those shrimp fresh or frozen? In either case, WOW.
PS: Unsettled weather here, too...instead of cooking something wonderful under our one remaining pop-up (the other NEW one got trashed in the storm), we relaid the kitchen floor.

Great plate AGAIN! It's funny you should post this because my wife arrived home from work last night with a bag and said this is yours. She NEVER ever buys me seafood, she retches at the smell. But she had a 1kg bag of frozen shrimp. Big ones. I'm thinking I'm gunna have replicate your dish man. She bought them from kids who were fundraising. My win,lol.

It was really good, but I am kicking myself because I lost track of the crucial minutes of where Shrimp is perfect and then where it becomes overdone.
These we're right on that line favoring overdone, grrr.

Sailor, these we're unfortunately frozen. I wanted fresh, but all they had was the 30 per # range and I wanted large or jumbo for this meal.
PB, yeah, I'm not ever remembering weather like this before in my life. I actually Love the rain, but it's really causing problems all along the east coast.
Deb just showed me a video of the family amusement park/water park called Knoebles up here.
You should search it online, it's unreal.

I took a look, WV.... Oh my.
A friend whose Dad had a home maybe (if memory is correct)! around the Delaware Water Gap got flooded out three times in a row, and this was in the early 2000s. Hope the weather dries up soon.
I might take a shot at frozen shrimp if the price is right.

I know that river very well, there is a spot near Belvidere Nj along the Delaware that would always get hit.
I've seen the water so high that all we could see was the gutters and rooves of the houses. People would get back on this feet time and time again and keep rebuilding.
The last bad one i saw was 15 years ago or so. After that, the government condemned the area for any human living so no houses were rebuilt again.
I'm sure the insurance companies had a big say in that.
Pretty sad thing to see even from " outside looking in "...
