Newbie from DFW

Postby Hoop » Thu Jun 07, 2018 9:36 am

Hello all, I am new to the forum but have been lurking for a few days and seems like a great group of folks! I have a 10 year professional culinary background and love to cook, but really want to step up my smoking game, learn from some people better at it than me, and this seems like the place to do it. Favorite BBQ to cook would be ribs, brisket and pork butt mostly over either pecan, oak or applewood. I currently have a cheap barrel/UDS style smoker but am picking up a mid level Old Country Pecos smoker in a few weeks, so looking to learn as much about offset stickburners as I can to be ready. If anyone can give any advice or pointers I am all ears, thanks
