Well Justin and Sir Egg aren't the only ones that can serve up a Dish made famous by our Neighbors across the River. This was a spur of the moment quick decision and it turned out just OK. It definitely needed more and darker Roux. First time for me to use this recipe and it needs some tweeking but if anyone would like to have it just holler.

The recipe I used I didn't brow the rout like you usually would. After cooking the trinity down in enough butter to choke a goat you slowly add the flour to the trinity till it is coated.

For a quick fix, Tony Chachere's has an Instant Roux Mix for small quantities that will work

Also, the crawfish tails shown on the pkg are no where close to the teenie weenie ones inside the box.

Sherry and I have used it before when we just wanted a small portion for the 2 of us; not as good as home made but it's handy

Looks good. I agree with Justin. I really like a dark roux for a gumbo or stew but you don’t need a dark roux for etouffee.
