Seeking Capt'ns Crisp !

Postby OldUsedParts » Tue Feb 06, 2018 2:24 pm

Today I decided to try and get that crispy skin that Capt'n got on his wings over the weekend. Let me just say that they were tasty but I "failed" in the crispy department. Also whooped up some ABTs just in case.

Had the wings hanging with Suckle Busters Hootchie Mama most of the morning.

About an hour before grill time I sprayed the wings with Canola and dusted with Baking Powder.

Got the Kingsford ready and put everything over the coals with lots of distance between the coals and Lunch.

Even tho I tends to darken your "Q" I sure like to chunk in a double hand fulll of pre-soaked Mesquite chips for flavor. I baby sit them for about 45 minutes, moving things around to avoid flare-ups.

Since I had stuffed the ABTs with my favorite cream chez and pepper jelly, I knew I couldn't flip them on the ECB so I finished them in the oven at 400 in a foil boat.

Plated them and Ate'd them.

They certainly look good. I've had trouble with crispy skin for a while. Bite through, I can obtain.. Crispy seems to come by accident though. :(
