No time Salmon prep
Had some fresh Salmon in fridge that needed cooking or put in freezer.
Elected to cook some up quick for dinner last night.
Seasoned with some Cajun seasoning and Lemmon pepper.
Heated up some Olive oil on the stove in a skillet.
Cooked meat side down for a few minutes on the stove top, after which I turned it skin side down, put the lid on the skillet and set it in the oven preheated to 350.
Cooked to a IT of 135. Removed from oven and added some melted butter to the fish
Total of 30 minutes from start of prep to serving. Quick but ohsogood.
Notice the fin. I don't eat that but I leave it on the Salmon during cooking. The meat next to that fin is to die for.

I'm one that believes in leaving the tail on as well, it's alot like cooking Shrimp.

I've really been hankering for some scallops, and now you have me on a salmon kick. I wonder, do those 2 go together any kind of way? Maybe just some pan seared scallops for the appetizer and cedar plank salmon as the main.

Hey bill, did you get to try our salmon on your travels in nz? Just wondered on your thoughts? I only like salmon from the can and served on toast. I think it's a kiwi thing. Salmon from can mixed with s and p and teaspoon malt vinegar on toast is a quick go to lunch for us here.

After seeing the post about the fin being left on it made me think of fried whole catfish and how much I love those fried tails. Sorry to get off topic.

Sorry Russ...never tried your Salmon while in your neck of the world.
Had other fish tho. Can't remember what any of it was called but I never had a bad seafood meal while there. I'll try Salmon the next time we're there.
Outlaw....Planked Salmon goes good with anything seafood. Scallops will work. I like all seafood but Scallops for some reason just don't sit right with me. Too rich of flavor maybe

Back to the Scallop hi-jack, if I may, they are always a challenge for me, especially when trying to find "good ones" but every now and then H.E.B. will have some large decent ones and I'll grab a couple dozen to wrap in bacon and grill over charcoal. The good ones also work well with a Seafood K-Bob mixed in with Shrimp, Peppers, Own-Yawns, Squash, Zucinni and ETC.

You really need to try Nelson or sounds scallops. These are big meaty and juicy, we also have other scallops called gem scallops, they are nil, I wouldn't give you a pie for a sack of them.
